In case you missed it, January was National Soup Month and, in the words of Seinfeld’s famous Soup Nazi, “No soup for you!” Just kidding, we’ve got plenty of soups for you to enjoy!
No matter what the weather, your mood, or time of day, there’s a soup for every occasion. So, feeling inspired by National Soup Month, some of us at the Mr. Food Test Kitchen decided to participate in a soup swap. We each brought in our favorite soups to sample and now I’m sharing those recipes with you in hopes you’ll discover one or two new soups to try for yourself. Enjoy!
Amy’s Healthy Slow Cooker Comfort Soup
Using your slow cooker, this hearty, meatless soup is “souper” easy to make and perfect anytime. It’s loaded with beans, tomatoes, quinoa, and kale. The only thing missing is guilt! (I think my soup went over pretty well, if I do say so myself!)
Ana’s Paleo Chicken Tortilla Soup
This flavorful soup looks like you spent all day making it, but comes together quickly. The Southwestern flavor is just right without being all up in your face spicy. You could serve this Chicken Tortilla Soup with the toppings on the side like Ana did for us, so your gang can help themselves. It’ll be a hit!
Merly’s Cuban Cream of Malanga
This Cuban-style soup was a staple in Merly’s house growing up. If you’re not familiar with malanga, it’s a root vegetable, like a potato, but with a richer flavor. The texture of this soup reminded me of a creamy potato soup. Merly served this with some drizzled olive oil and sliced Spanish chorizo on top. Yum!
Ever have a meal that comes with a heaping side of memories? Well, this soup is like that for Jaime. It’s a family recipe and every time she makes it, she thinks of her mom. This chicken soup is the real deal guys. As a matter of fact, this soup is so good, it was included in one of our cookbooks, Just One More Bite!.
Jodi’s Lighter Chicken & Wild Rice Soup
This soup is so thick, creamy and delicious, even the pickiest of eaters will find it hard to resist! The combination of chicken, veggies, and wild rice will have your gang going back for seconds. Plus, she made it with reduced-sodium chicken broth and fat-free half-and-half, to make it a little lighter.
Yolanda’s Pumpkin Ginger Soup
Don’t let the name fool you – you do not need to wait for fall to try this soup! Your taste buds will thank you. The fresh ginger and pumpkin combined with curry and coconut milk make this delightfully creamy soup perfect anytime you crave that warm fuzzy feeling. Be sure to enjoy this with a loaf of crusty bread for the complete experience.
Kelly’s White Bean & Sausage Soup
OK, technically, this one isn’t a Kelly original; it’s actually from our Cook It Slow, Cook It Fast! Cookbook, but it’s become one of her favorites and now it’s one of ours too! Kelly used a mild pork sausage, but you can kick it up with a spicy version if you like or even lighten the soup with turkey sausage. No matter how you make this slow-cooker soup, it’s bound to become one of your favorites too.
